On days when you and your family are racing in 15 different directions at once, does it seem nearly impossible to find really quick and healthy meals and snacks that actually taste good, too? If this sounds familiar, then you’ve gotta check out all the great (easy!!!) recipes from Two Healthy Kitchens!
Northeast Ohio moms Gretchen Fritsch and Shelley Fulton launched their popular food blog in April 2013, specifically to help busy, on-the-go families. They pooled Shelley’s hundreds hours of cooking classes and Gretchen’s master’s degree in nutrition & dietetics to create a web site filled with simple, super-nutritious, yet mouth-watering recipes – all family-tested in their very own homes.
Easy, Healthy Snacks
Need easy, no-brainer, grab-and-go snacks that’ll keep the kids full and powered up for all their after-school activities? THK has loads of ideas! You just have to try some of their awesome (no-bake!) Snack Bites. With flavors like Almond Joy, Peanut Butter Cup and Oatmeal-Chocolate Chip Cookie Dough, these nutritious snacks will get a big thumbs-up from the kids – who won’t even know (or care!) that they’re eating lots of protein, whole grains and healthy extras like flax! Snack Bites will get a thumbs-up from you, too, because they’re so easy to make!
Super-Fast Dinners
Feeling a tad guilty as you realize dinner is probably going to come from a drive-thru again tonight? Two Healthy Kitchens has you covered! From lightning-fast skillet meals to quick and easy crock-pot recipes, you’ll be feeling like a rock star as you whip together a dinner your family will love … all with plenty of time left over to get to dance … or soccer … or play group … or that rescheduled t-ball game … or …… Some of the recent faves on their site include their Crock-Pot Creamy Chicken Corn Chowder and Un-Stuffed Pepper Skillet and there are tons of other yummy options!
Kids in the Kitchen = Fun!
Looking for fun ways to get your little ones involved in the kitchen? THK’s Fruit Pizzas and their Ants on a Log 2.0 are perfect! They’re even great ideas for interactive kids’ parties or play groups! Healthy and so yummy, too – the kiddos are gonna love this!
Mmmmmm … Quinoa!
And how about super-trendy, uber-nutritious quinoa? One of my very favorite recipes from Two Healthy Kitchens is their Corn, Edamame and Quinoa Salad with Lemon-Dijon Vinaigrette. It’s the kind of recipe that you can even take to a cook-out or dinner party, knowing that everyone there will go crazy for it and think you’re a genius cook (while you secretly revel in the knowledge of how easy it was to make and how surprisingly healthy it is, too!).
Help for Picky Eaters!
Ahhhhh … but maybe you’re shaking your head … enticed by the idea of all these yummy, easy recipes, yet frustrated because it always seems like your little ones are just too picky to try new things. Not to worry – Shelley and Gretchen have lots of great ideas to help you there, too! They’ve got a whole series of great posts on 25 Tips for Picky Eaters – and they’ve even spoken on the topic to busy local moms just like you!
All of their recipes are totally free, printable and easily shared on FaceBook or pinned to your Pinterest boards.
