I recently received a copy of the new Game-Day Fan Fare cookbook from Gooseberry Patch and had a chance to review it . This was my first time ever having a Gooseberry Patch cookbook. I really like the way the book is laid out. This cookbook has everything from breakfast and brunch to recipes for feeding a whole team of hungry fans.  And all the chapters are named to keep with the theme of the book, Kick-off Brunches, Superbowl Soups and Salads, Major League Munchies, and so on.

What I liked most about the cookbook is that all the recipes, while perfect for tailgating and game day, are also perfect for pretty much anytime you need yummy, crowd-pleasing food. Whether it’s for you and your kids on a busy weeknight, a summer cookout, or tailgating at your kids’ baseball tournaments or weekend-long swim meets this summer—the new Game-Day Fan Fare cookbook from Gooseberry Patch  is the cookbook for you!

Slow-Cooker Buffalo Chicken Nachos Recipe

Rachel Hodges from Omaha, Arkansas shared this delicious recipe with Gooseberry Patch. She writes, “These yummy nachos are a savory, spicy treat and it’s a breeze to make them in the slow cooker. Make it even easier by using tenderloins instead of chicken breasts…just cut the cooking time in half!”

Slow-Cooker Buffalo Chicken Nachos Recipe Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • garlic salt to taste
  • salt & pepper to taste
  • 12 oz. bottle buffalo wing sauce
  • 1/2 c. ranch salad dressing
  • 1/2 lb. pasteurized process cheese spread, cubed
  • 10 oz. can diced tomatoes with green chiles
  • 12 oz. pkg. tortilla chips

Slow-Cooker Buffalo Chicken Nachos Recipe Instructions

  1. Put chicken in a slow cooker
  2. Add garlic salt, salt, and pepper on top
  3. Cover chicken with buffalo wing sauce
  4. Cook on low, covered until tender, about 4 hours.
  5. Remove and shred chicken with 2 forks and drain off any excess liquid.
  6. Stir in salad dressing.
  7. Combine cheese and tomatoes with green chiles in saucepan.
  8. Cook and stir until cheese melts.
  9. Place tortilla chips in layers on a large serving plate.
  10. Spoon cheese sauce over chips; top with chicken. Serves 6 to 8.
