Pea Pesto Crostini Ingredients

  • 10 oz frozen peas, thawed
  • 1 clove garlic
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp salt
  • 2/3 cup olive oil
  • Whole grain baguette or ciabatta bread, preferably day old, in 8 (1/2 inch thick) slices
  • 1 small tomato, diced or 8 cherry tomatoes, halved

Pea Pesto Crostini Instructions

Pea Pesto Recipe Instructions:

  1. Using food processor, pulse peas, garlic, parmesan cheese, salt and pepper together.
  2. Slowly add 1/3 cup of the olive oil while machine is running and continue to mix until well combined, 1 to 2 minutes.
  3. Season with more salt and pepper, if needed.
  4. Set aside.

Crostini Recipe Instructions:

  1. Toast bread for 2 – 3 minutes in oven on broil setting.

Combine Pea Pesto with Crostini:

  1. Transfer bread to platter and spread 1 to 2 tablespoons of pesto on each slice.
  2. Top crostini with 2 tomato halves and Parmesan cheese
  3. Serve.

Makes 8+ crostini (I could have easily made more than a dozen crostini with this recipe, perhaps I didn’t add enough pesto on each slice.)
