African Malva Pudding Poke Cake

vanilla extract
Instructions
Preheat oven to 325 degrees F
Grease an oven dish. I used a 9x 13 size for this recipe that makes a large batch for parties, 1/2 the recipe and use a 7 x 7 inch Pyrex dish.
Beat Monk Fruit In The Raw (or sugar) and eggs, until thick and lemon colored,
Add the jelly and mix through.
Stir in melted butter and vinegar
In separate bowl, mix together flour, soda and salt.
Add flour mixture to egg mixture. Beat well.
Pour into an oven-proof dish and bake until pudding is brown and well-risen. 30-40 minutes
Heat evaporated milk, butter, Monk Fruit In The Raw (or sugar), hot water, and vanilla extract to low boil, stirring constantly to make the sauce.
Once cake is baked, poke holes with the end of a wooden spoon to absorb the sauce.
Pour sauce over the pudding as soon as it comes out of the oven and holes are made.
Let sit at least 30 minutes before serving. Serve warm or cool.
