African Peanut Butter Stew Recipe
    1. Salt the chicken and brown in vegetable oil over medium heat in large pot or skillet.
    2. Set aside to cool, then chop or shred.
    3. Saute onion in remaining oil until translucent.
    4. Add ginger, garlic, and sweet potatoes in remaining oil for 5 minutes.
    5. Add the cooked chicken, broth, crushed tomatoes, diced tomatoes, peanut butter, cumin, turmeric, cayenne, salt, and pepper. Stir to combine.
    6. Cover pot and simmer for 30-45 minutes, or until sweet potatoes are tender.
    7. Add chopped kale and cook for last 5 minutes.
    8. Garnish with cilantro, onions, and peanuts.
    9. Serve alone or with long grain rice.
