African Peanut Butter Stew Recipe

thighs and/or wings

yellow or white onion

fresh kale leaves
finely chopped

piece of ginger
peeled and minced

garlic cloves
chopped

Sweet potatoes
peeled and cut into chunks

can of crushed tomatoes

chicken or vegetable broth

peanut butter
creamy or crunchy, I use Jif Creamy

c
roasted peanuts
1
tsp
ground cumin
1/2
tsp
turmeric
1
teaspoon
cayenne
optional
Salt and black pepper
1/4
cup
to 1/2cilantro
chopped to garnish
1/4
c
green onion
chopped to garnish
peanuts to garnish
Instructions
Salt the chicken and brown in vegetable oil over medium heat in large pot or skillet.
Set aside to cool, then chop or shred.
Saute onion in remaining oil until translucent.
Add ginger, garlic, and sweet potatoes in remaining oil for 5 minutes.
Add the cooked chicken, broth, crushed tomatoes, diced tomatoes, peanut butter, cumin, turmeric, cayenne, salt, and pepper. Stir to combine.
Cover pot and simmer for 30-45 minutes, or until sweet potatoes are tender.
Add chopped kale and cook for last 5 minutes.
Garnish with cilantro, onions, and peanuts.
Serve alone or with long grain rice.
