Best Peanut Butter Buckeyes Recipe
  1. Combine peanut butter, butter, vanilla and salt in large bowl.
  2. Beat with an electric mixer on LOW until blended.
  3. Add 2 cups powdered sugar, beating until blended.
  4. Beat in additional powdered sugar until mixture, when shaped into a ball, will stay on a toothpick. Shape into 1-inch balls.
  5. Refrigerate.
  6. Form 1″ balls and place in refrigerator or freezer for 1/2 hour or until firm.
  7. Melt chocolate chips and shortening together in a microwave-safe bowl on MEDIUM for 30 seconds, stir. Repeat until mixture is smooth.
  8. Dip Protein Buckeyes with a toothpick into chocolate mixture, remove excess, and place on wax paper-lined tray.
  9. Keep refrigerated.
