Easy Crustless Bacon & Spinach Quiche Recipe that Kids Love

Shredded Cheese (Use your favorite
I use Monterrey Jack and Mozzarella. Cheddar and Swiss are good too.)
Cook bacon (I cook in the oven at 400ºF for 10 minutes) and drain on paper towels.
Preheat oven to 325ºF for quich
Saute spinach*, onions, and tomatoes* in a little bacon grease. (*Set aside 2 tbsp of onions and tomatoes for garnishing.) Remove from heat.
Crumble bacon and add to bacon and spinach mixture, mix together.
Whisk together eggs and sour cream until blended.
Pour egg mixture into greased 13×9-inch baking dish top with bacon and spinach mixture, then top with cheeses.
Bake 30 – 35 min., until the center is set.
Garnish with reserved onions, tomatoes, and additional sour cream.
