Mac and Cheese with Greens Pie
Half & Half
2% or Whole Milk
Heavy whipping cream
Salt & Pepper to taste
Preheat oven to 375°F.
Cook macaroni as directed, draining right before it is tender. Drain and rinse with cold water.
Butter and base-line a deep 9″ springform tin. Wrap the bottom of the tin with aluminum foil to protect from leaks.
Saute green onions and garlic in butter, add greens and cook until wilted.
Cook greens until wilted.
Whisk eggs, creams and milk together. Add 1/4 cup Parmesan and all of mozzarella cheese and cheddar cheese. Salt & pepper to taste.
Stir in macaroni and cooked greens mixture.
Add mixture to springform pan. Top with remaining Parmesan cheese.
Bake 30-35 minutes or until golden brown. Cool in tin for 15 minutes while loosely covered with foil.
Remove sides from springform pan and place on serving tray. Cut into wedges and enjoy!
