Root Vegetables with Sausage Recipe

chicken, pork, or beef in flavor of your choice
Preheat oven or grill to 400°. Spray baking pan or grill rack.
Scrub carrots and root vegetables until skin is clean or peel outer skin of each vegetable.
Slice thin root vegetables.
Place carrots and root vegetables on baking pan. Toss with olive oil, salt, and pepper.
Roast vegetables for 25 minutes or until vegetables are fork tender.
Prepare sausage as directed.
Remove vegetables from oven. Add cooked sausage and spinach. Toss to combine.
Combine chicken broth, melted butter, lemon juice, and zest. Drizzle over vegetable sausage mixture.
Top with Parmesan cheese.
