This Chickpea Lime Spinach Salad Recipe came from one of our fans, Cheryl Tennant Hopkins when I asked for a good potluck recipe this weekend. I took it to our potluck dinner and everyone, I mean everyone loved it! Thanks, Cheryl! One lady said she has never liked chickpeas and she had 2 servings! Actually, several people had second helpings.
I like that this recipe has a lot of flavor and is still on the healthy side! This recipe is easy.

Chick Pea Lime Salad Recipe Ingredients
- 2 -3 cans 15.5 oz Chick Peas or Garbanzo Beans, drained and rinsed
- 1 bag raw Spinach, finely chopped
- 1/2 bunch of Cilantro (about 1-1/2 cups), chopped
- 1 small Sweet Onion, chopped (optional)
Dressing Ingredients
- 1-1/2 cups Olive Oil
- 4 TB Dijon Mustard
- 4 TB Lime Juice (I used True Lime Crystallized)
- 5-6 TB Sugar
- 1 TB Chili Powder or Cumin
- Salt & Pepper to taste
Chick Pea Lime Salad Recipe Instructions
- Stir together Chick Peas, Spinach ,Cilantro, and Sweet Onion
- Mix together dressing ingredients
- Gently toss together the salad and dressing, adding the amount of dressing you wish to use
