Easter and Spring Recipe Ideas and Tips
I am a big fan of holiday themed baking stations like the one above. They make it easy to celebrate more and fuss less in the kitchen. Pillsbury does a fantastic job each season with seasonal cakes, frosting, and tons of recipes on the Pillsbury website and Pinterest page.

Funfetti® Spring Sundae Cupcakes
This weekend, I surprised my kids with Funfetti® Spring Sundae Cupcakes recipe. This recipe uses the Spring themed Funfetti cake mix and frosting with a few other add-ons like chocolate chips and ice cream! Kids won’t have to hunt long for this Easter surprise! One bite into the cupcake and my kids were were like, “Ice cream Cake!”

This is a super easy recipe, just prepare the Funfetti cake mix as usual but add in mini chocolate chips, then bake as usual.
BTW, Pillsbury has a Gluten-Free Funfetti Cake Mix that I’ve heard is amazing! I posted a pic on Instagram and heard from fellow moms that have had great success with it.
Next, cut the tops of the cupcakes off, right at the cupcake liner and set aside. Scoop out the center of the cupcake with a melon ball scoop or knife. Add a small scoop of your favorite ice cream – about a tablespoon.
Decorate the tops of the cupcakes with the Spring Funfetti® Frosting and candy bits. Then, add a layer of Cool Whip and a cherry on top for the ultimate sundae! Use the knife to lift the top back onto the cupcakes. It should set right on top of the bottom cupcake and ice cream.
I think I went a little overboard on the ice cream, so mine didn’t sit right on top but it was more exciting that way for my kids! I wanted them to see the ice cream right away! They loved this fantastic surprise. If you are counting carbs, you’ll be pleased to know that this recipe is under 40 carbs (if you use a natural ice cream like Breyers). Not bad for an Easter dessert!
This recipe freezes well. Make them ahead of time, pop them in the freezer, and serve when ready!
Celebrate More with Easy Baking Tips
The above recipe was easy but took a little time to prepare. Pillsbury makes it easy to celebrate more every season with their holiday lines of products like the above mentioned Spring line. Just whip up a quick batch up cupcakes with Funfetti frosting and festive candy bits.
Skip the ordinary cupcake liners and go for a festive Easter and Spring themed cupcake liner for more fun and smiles.

I also saw really cute gummy chicks and bunnies, just be careful if you are watching sugar and carbs as they add up quickly!
