Easy Zucchini Bread Recipe

This moist zucchini bread is good as both a dessert and side dish. 1 large zucchini will make 3-4 loaves of zucchini bread. My kids love this zucchini bread. We grow zucchini in our vegetable garden, and give many loaves of bread to our family and friends.This recipe is easy.

This recipe is freezer friendly. Wrap it several times in plastic wrap, then 1 layer of aluminum foil. I usually pack 2 in a gallon size freezer ziplock bag and label it. It is just as moist and delicious when thawed out in the winter months.

Ingredients:

  • 1 cup sugar
  • ¾ cup oil
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup grated zucchini
  • 1.5 cup flour
  • ½ tsp. salt
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • 1 tbsp lemon juice
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together by hand.
  3. Separate into two greased bread pans
  4. Bake at 350 degrees for 35 to 45 minutes.
  5. Cool on cooling rack.

    This sounds yummy. I’ll have to try it this summer when the zucchini is plentiful. I’ve made it before, but never with lemon juice in it. That must add a nice zing to it. Thanks!
