One thing I love about Gooseberry Patch cookbooks are the helpful cooking & kitchen tips they sprinkle throughout the book. Did you know that if you take something out of the freezer to thaw for dinner and then your plans change, as long as there are still ice crystals on the food, its safe to refreeze? Want to make a bread bowl for your soup? The little tips in the soup & bread sections shows you how. Those are just a sampling of the great tips they give.

The Gooseberry Patch Good-for-You Everyday Meals Cookbook has a great final chapter, too: A Homemade Pantry. This section has recipes to make all your own sauces and seasonings needed in the recipes throughout the book. Salsa, sauce, dressings, even a homemade alternative for cream-of-anything soup (which we all know isn’t the healthiest thing in the supermarket!).

Goode & Healthy “Fried” Chicken Recipe

After going through the book, I settled on the Goode & Healthy “Fried” Chicken main dish recipe. I had just mentioned to my husband how I wanted to find a healthy fried chicken recipe and voila–Gooseberry Patch delivered.

  • 3 egg whites
  • 2-3 cups panko bread crumbs
  • salt & pepper to taste
  • 10 chicken things, skin removed

Goode & Healthy “Fried” Chicken Recipe Directions:

  1. Beat egg whites in a shallow dish; set aside.
  2. Combine bread crumbs and salt & pepper in a gallon size ziplock bag.
  3. Coat chicken with egg whites, one piece at a time.
  4. Drop chicken into bag and shake to coat lightly.

  6. Arrange chicken in two 13×9 baking pans coated with non-stick spray.
  7. Bake uncovered at 350 degrees for 30-40 minutes, until chicken juices run clear.

The prep was simple enough and cook time was pretty standard. I used both drumsticks and thighs, but I think chicken breasts or even little wings would be just as good. I prefer chicken breasts when cooking anyways because I hate touching chicken (yuck!).

This was an interesting recipe. While it didn’t taste much like friend chicken, it was good. I used an italian-style panko breading that had italian seasoning in it, which I really liked. But I’m not sure if it took away from the “fried chicken” taste the recipe creator was going for.

A few other changes I would make the next time around is to use olive oil on the chicken instead of egg whites so that the chicken got a little more crispy. And I’d place the chicken on a pan in the oven instead of a glass dish. I found that the bottom of the chicken was a little soggy (but it could be my ancient oven, too!!)
