Yahoo! Every kids dream has come true! Saturday is National Eat Ice Cream for Breakfast day! I’m giving you a heads up to really surprise your family! A recent study concluded that eating ice cream for breakfast is a good thing because it makes you more mentally alert, have faster reaction times, reduce stress.
So, to celebrate this exceptionally fun day and be mentally alert, we are preparing Blueberry Pancakes with Vanilla Ice Cream on top!
Nothing out of the ordinary with my recipe except that it is Ice Cream for Breakfast which makes it extraordinary and fabulous! I’ve been using the That’s Smart brand of Buttermilk Pancake mix lately, it can be found at Acme Fresh Market as one of their value brands. I’m really impressed by how fluffy the pancakes are and all you do is add water! (Many value brands require eggs and oil too.) I also add a few blueberries to the batter once it’s on the griddle. Nothing beats biting into a juicy blueberry while eating pancakes…unless you top it with ice cream!!
I’m topping this recipe with Food Club Vanilla Ice Cream – another great value priced item at Acme Fresh Market. You can’t beat the price either! Top the pancake with a hearty scoop. Your kids will be SO excited! You may not need syrup at all. I drizzled this with a low-carb syrup but you could also use a blueberry syrup, that would delicious!
Ice cream has its benefits for sure, it takes us to a place of happiness, oftentimes reflecting on our childhood of eating ice cream. This study compared the test subjects who ate ice cream to those that simply drank cold water (to see if it was the coldness that gave the results) and compared both of those groups to a group of test subjects that didn’t’ eat any breakfast at all. Of course it comes as no surprise that people who ate ice cream and has a burst of glucose will do better than those that eat nothing at all.
But, let’s ignore that part and enjoy ice cream for breakfast, even if it is just this one day of the year, national eat ice cream for breakfast day!
