It is back-to-school time and I always want my kids full, energized and ready to learn. I try to give my kids a protein-rich breakfast that will stick with them all morning long and this Bacon Egg & Tomato Sandwich on English Muffin Bread recipe does the trick!
This recipe is best with fresh, heirloom tomatoes. The taste of heirloom tomatoes are way more intense and flavorful than any other. My family gets our heirloom tomatoes from Farmer Jones Farm at the Chef’s Garden. They use to only ship to chefs, before the pandemic but now ship nationwide to anyone that enjoys specialty produce! Get a variety of heirloom and specialty tomatoes in Farmer Jones Farm Tomato Box, a must-have for this summer! This box is packed full of baby specialty, cherry, toybox, and heirloom tomatoes.
You can use store-bought English muffins in a pinch, but we highly recommend baking up a batch of our Easy English Muffin Bread, it’s so easy and perfect for this recipe!
There is nothing more satisfying than this Bacon Egg & Tomato Sandwich on English Muffin Bread on a work or school morning. It’s hearty, tasty, and will keep you and your kids energized all morning long. Kids learn better when they eat breakfast – and we work better. As a mom of two children with type one diabetes, this is a great breakfast for them too because with the protein from the eggs, cheese, and bacon, it slows down sugar absorption of the carbs from the bread so their blood sugar doesn’t spike. That’s a win-win for anyone but especially anyone with type one or type two diabetes.
