Summer is here and it is time to start cooking over a campfire! My family loves hanging around a campfire together, especially if dessert is involved. My son love cooking in a cast iron skillet over an open fire, so we created a new recipe that you’ve gotta try! We call it Campfire Cake with Berries Dessert. It is delicious and easy to make. No campfire? No problem, we have instructions for on the stove/oven too.

- 6 tbsp butter
- 1 tbsp sugar
- 4 Entenmann's Mini Fudge Iced Golden Cakes cut into fourths
- 12 oz Fresh berries
Ingredients

- Combine berries with sugar and set aside.
- Prepare campfire or turn oven broiler on.
- Add butter to cast iron skillet and melt over direct heat over campfire or on stove-top.
- Add Entenmann's Mini Fudge Iced Golden Cakes, frosted side up. Cook for 1-2 minutes until bottoms are golden brown and cakes are warm.
- Add berries around the cakes and gently stir, cook 1-2 minutes until berries are warmed.
- Remove from heat.
- Add marshmallows and cover with aluminum foil, if using campfire.
- Add marshmallows and put in oven under broiler for 1 minute, if using oven.
- Serve immediately.
This recipe uses Entenmann’s NEW Mini Fudge Iced Golden Cakes. It is the perfect cake for this recipe because they are easy to take with you to the campsite if you are actually camping, plus they are moist, delicious, and have a chocolate fudge topping that is just the right amount of chocolate. You could also use Entenmann’s Mini Pound Cakes and add a handful of chocolate chips to this recipe.
Adding fresh berries to this campfire dessert adds sweetness and tartness. The sugar added to the berries creates a caramelized effect that makes this dessert brilliant. You can’t have a campfire dessert without gooey, hot marshmallows, they pull this dessert together for the ultimate campfire dessert.
