Easy Crustless Bacon & Spinach Quiche Recipe that Kids Love

One of my kids’ favorite dishes is Easy Crustless Bacon & Spinach Quiche. Over the years, I’ve tried various versions – both with and without crust and this is their favorite.

Easy Crustless Bacon & Spinach Quiche Recipe

This recipe is easy to make and can be prepared ahead, great for weekday nights or for breakfast. Pair it with a glass of juice and fruit salad for an irresistible meal that parents and kids alike will enjoy.

Easy Crustless Bacon & Spinach Quiche Recipe that Kids Love
  1. Cook bacon (I cook in the oven at 400ºF for 10 minutes) and drain on paper towels.
  2. Preheat oven to 325ºF for quich
  3. Saute spinach*, onions, and tomatoes* in a little bacon grease. (*Set aside 2 tbsp of onions and tomatoes for garnishing.) Remove from heat.
  4. Crumble bacon and add to bacon and spinach mixture, mix together.
  5. Whisk together eggs and sour cream until blended.
  6. Pour egg mixture into greased 13x9-inch baking dish top with bacon and spinach mixture, then top with cheeses.
  7. Bake 30 - 35 min., until the center is set.
  8. Garnish with reserved onions, tomatoes, and additional sour cream.

What I like about quiche is that I can provide my family a nutrient, protein rich meal that will keep my family enjoys every time. If I have other vegetables on hand, I’ll add them to the quiche too. For instance, I might add green and red peppers, use Mexican cheeses, and top with salsa for a totally different dinner.
