- 2 boxes Birds Eye Veggie Made Mashed Cauliflower (original garlic, or sour cream & chives)
- 1 lb ground beef
- tablespoon ½olive oil
- 1 small onion chopped
- 2-3 carrots chopped
- 1 rib celery chopped
- 1 c peas
- 2 cloves garlic minced
- 1 pound lean ground beef
- 1 tablespoon Worcestershire sauce
- 1/2 c tomato sauce
- 1 cup peas
- 3/4 c Chicken broth
- 1/2 c Cheddar cheese shredded (optional)
- 1/2 tsp salt
- 1/2 tsp pepper

- Pre-heat the oven to 375°F.
- Heat a large pan with the olive oil over medium heat
- Add the onion, garlic, celery, and carrots and saute until the onions are soft, about 5 minutes.
- Add the ground beef and brown thoroughly for about 5 minutes.
- Stir in the Worcestershire sauce, tomato sauce, chicken broth, peas, salt, and pepper. Simmer 10 minutes or until broth is adsorbed and thickened, stirring often.
- Stir in cheese, if desired.
- Transfer to a baking dish.
- Warm Birds Eye Veggie Made Mashed Cauliflower in microwave, per instructions on box.
- Spread Birds Eye Veggie Made Mashed Cauliflower over the meat mixture.
- Sprinkle with additional cheese, if desired.
- Bake until mashed cauliflower is slightly browned and crispy, about 20 minutes.
- Allow to sit 10 minutes before serving.
As you can see, this recipe is easy to prepare with a ground beef, vegetables, Mashed Cauliflower , and simple sauce.
Start by sauteing the onion, garlic, celery, and carrots.
Next, brown the hamburger. You can use ground turkey or lamb if you prefer for an even leaner dinner. Stir in Worcestershire cause, tomato sauce, chicken broth, peas, salt, and pepper. This makes a delicious sauce. If you prefer, you could also add a bit of thyme, rosemary, or parsley too. I’ve even heard of people using taco seasoning to add a bit of a kick to the recipe. You can add shredded cheese at this point too if you prefer.
For this recipe, I use frozen peas. You could make it even quicker and easier by using Birds Eye frozen mixed vegetables for all the vegetables. Frozen vegetables are just as healthy as fresh vegetables and actually even better as they are picked at the peak of freshness and then flash frozen.
The biggest time-saver and carb reducer in my Low Carb Shepherd’s Pie with Mashed Cauliflower Recipe is the mashed cauliflower topping.
