Ohio Ramps with Spaghetti

It is ramp season in Ohio. If you are looking for a delicious way to enjoy ramps with your family, then you have to try our Ohio Ramps with Spaghetti recipe.  This recipe is easy to prepare, full of flavor, and really showcases the unique flavor of Ohio ramps.

My son has been outside the majority of this pandemic. He is forging for edibles, building forts, and hiking.  Although this Spring is not as consistent or warm as we’d like, it seems to be good for plant life. Between that and our mild winter, we have more ramps in our backyard wooded area than ever.  Ramps are wild onions that can be found in mostly wooded areas where it is cool and moist between April and June. You can only harvest Ohio ramps on private property, so don’t plan on going to your local park to harvest or you could be facing some fines.

Like I said, my son has been forging for edible plants and finding a LOT of varieties in our woods. It isn’t enough to eat a leaf and know that you won’t get sick, my son wanted to make a recipe. We love being adventurous, so we searched online and found a few that looked good and created our own Ohio Ramps with Spaghetti recipe. Instructions
  1. Cut Ramps at the base and ice the bulb ends of the Ohio Ramps. Cut the Ramp leaves into 3 inch sections.

  2. Heat butter and oil in a skillet over medium heat. Add diced ramp bulbs and cook for 4 minutes. Season with salt and pepper.
  3. Add the Ramp leaves to the sauteed Ramp bulbs. Toss to coat.
  4. Prepare Spaghetti as directed. Drain pasta, reserve 2 cups pasta cooking liquid.
  5. Add cooked pasta to the skillet with sauteed ramp bulbs. Add 1/2 cup cooking liquid. Stir pasta until the liquid and diced ramps are combined. Add cooking liquid as needed until it evolves into a thick, glossy sauce that coats the pasta.
  6. Add Parmesan cheese and zest from 2 lemons to the pasta. Season as desired with salt and pepper.
  7. Top with Parmesan cheese and serve with a lemon half.

This recipe is remarkable! We love that it is unique because we picked the edibles from our own back yard.  The Ramps are delicious with an onion flavor and when cooked, a spinach texture. We will be making this recipe again for sure.
