Sheet Pan Chicken and Arrowhead Cabbage Recipe
Instructions
  1. Preheat oven to 425°F
  2. Combine olive oil, sesame oil, soy sauce, and rice vinegar. Set aside.
  3. Season chicken thighs with salt & pepper. Pour 1/3 marinade over chicken.
  4. Cut the Arrowhead Cabbages in half lengthwise. Season cabbage with salt & pepper. Pour 1/3 marinade over cabbages.
  5. Spray rimmed sheet pan with cooking spray. Place chicken thighs and Arrowhead Cabbages on tray. Add sliced onions. Pour remaining marinade over entire sheet pan.
  6. Roast for 35-40 minutes until chicken reaches 165°F and edges of cabbage are caramelized. If anything starts to brown early, cover with aluminum foil.

This is a simple recipe with lots of flavor!  I used bone-in chicken thighs from Acme Fresh Market for this recipe but you could use boneless chicken thighs or even bone-in or boneless chicken breast.

This recipe is unique in that it uses The Chef’s Garden Arrowhead Cabbages. This is a specialty cabbage about the fourth of an ordinary cabbage. Arrowhead Cabagge are mild and remarkably sweet, not the bold cruciferous flavor you may expect. This is why your kids will eat it too! I also love that these cabbages are rich in antioxidants and Vitamin C which are essential for good health, improves brain function, improves digestion, and protects against skin disorders and heart diseases.
If you haven’t made sheet pan recipes before, it’s time. It is the quickest way to get dinner in the oven and on the table. You can plate it afterward or serve buffet style straight from the sheet pan, which is what my family does. It couldn’t be easier.

The end results is a delicious roasted meal of chicken and cabbage. For a meal like this, I usually add a crusty, warm bread with butter and a tossed salad. With two kids that have Type One Diabetes, I also love that this is essentially a zero or low carb meal.
