Our Favorite Egg Recipes

My kids like eggs, we often eat them even for dinner.  I wanted to share with you some of our favorite egg recipes made safer with Davidson’s Safest Choice™ eggs. Mexican Breakfast Burritos

Nothing is better for breakfast than hearty Mexican breakfast burritos. I throw whatever fresh veggies that I have on hand like peppers, onions, tomatoes, and avocado. I usually use bacon but sometimes sausage. Sometimes I had Old El Paso Refried Beans to give it an extra filling boost. I alway add cheese like Colby Jack or Cheddar.

Mexican Breakfast Burritos are so easy to make. First, cook bacon, crumble and set aside. Drain the majority of the oil and then saute onions and peppers in the rest. I use my large Wonder Griddle so I can make enough for the whole family in one skillet.P1110587

Next, place on a warm tortilla and top with salsa, fresh tomatoes, avocado, and sour cream. Enjoy! We like this so much that I make it for dinner sometimes too.P1110591

Lime Egg Salad

I love Egg Salad of any kind. This lime egg salad recipe is just a few recipes we’ve thrown together.

Hard boil about 8 eggs, chop when cooled. For the dressing, mix together 1-1/2 TBSP mayo, 2 tsp lime juice, and salt and pepper to taste. Mix together the eggs, about 2 TBSP onions (red, yellow, or green), 1/4 cup crumbled bacon, and about 1/4 cup of cilantro.P1110606

Toast wheat bread and fill with the lime egg salad. It is the freshest tasting egg salad recipe I’ve ever tried! You could even add a slice of avocado to it.P1110612

Fried Eggs for Kids and All

My kids like fried eggs so they can dip their toast in the yoke. Their pediatrician warned me years ago that it isn’t’ safe to give kids eggs with the yoke because of risk of salmonella. You can’t tell if an egg has salmonella bacteria just by looking at it or smelling it. Washing the outside of an egg doesn’t help either because salmonella can be inside. I never wanted my kids to experience getting an infection, so we steered clear of undercooked eggs, including licking cookie dough off the spoon!

Now I can serve any kind of eggs to my kids without the fear of salmonella, including the above recipes and other lighted cooked or not cooked egg recipes like French toast, eggnog, and fried over-easy eggs with hash brown potatoes and/or toast so we can dip into the yoke.
