Our Baked Asparagus with Bacon and Parmesan Cheese recipe is a quick and easy low-carb side dish that goes well with any meat or entree, any time of year! Healthy, gluten-free, and low-carb, this recipe is a winner! You can’t go wrong with tender asparagus topped with crunchy bacon and Parmesan cheese! It’s one of my kids’ favorite vegetable side dishes – we usually make it a few times a month.

- 6 slices bacon
- .25 cup Parmesan cheese
- 2 bunches asparagus about 1.5 lbs
- 1 whole lemon sliced

- Preheat oven to 400° F Line strips of bacon on a parchment-lined baking sheet. Cook bacon for 15-20 minutes, or until desired crispness. Transfer bacon to paper towel and drain all but 1 Tbsp of bacon grease from the pan. When cooled, crumble.
- Trim asparagus ends. Spread onto baking sheet in a single layer - if using same one that bacon was on, remove used parchment.
- Drizzle with the reserved 1 Tbsp bacon grease. Sprinkle with crumbled bacon and Parmesan cheese.
- Roast until the asparagus is tender but still crisp and bright green and topping is starting to brown, about 15-20 minutes, depending on the thickness of the asparagus. Should be fork-tender.
- Transfer to serving dish and squeeze lemon slices before serving. Serve immediately.
This recipe is so easy to make that you can easily prepare for weeknight meals. To make it quicker, you can prepare the bacon in the oven at the same time as the asparagus and just top the asparagus after it is cooked – or cook the bacon ahead in the oven and refrigerate until ready to use (lasts 3 days in fridge after cooked). Baking bacon in the oven is a life hack that I discovered several years ago and have never gone back, it saves so much time!
The best cheese I’ve found for this recipe The Cheese Guy’s 2 Year Aged Parmesan Cheese! It is a wonderfully hard cheese that has a slightly sweet and nutty flavor.
