Buckeye Cupcakes Recipe
I took Buckeye Cupcakes to a recent holiday gathering and everyone loved them. The kids said they taste just like a peanut butter cup. Who can resist the combination of Creamy Jif Peanut Butter and chocolate combination?!

- 1 Chocolate Cake Mix I use Pillsbury Devil's Food Cake
- eggs per box instructions
- vegetable oil per box instructions
- peanut butter I use Jif creamy peanut butter
- 3 tbsp butter unsalted and softened
- 6 tbsp Confectioners Sugar or 1/3+ 1 TBSP
- 1/2 tsp vanilla extract

- Prepare cupcakes as directed on Pillsbury Devil's Food Cake box.
- Bake regular or miniature size cupcake and allow to cool.
- Prepare peanut butter filling by beating peanut butter, butter, and confectioners sugar together on Low until combined and then on High speed until thoroughly combined.
- Put peanut butter filling in a large freezer bag, cutting a small piece at the bottom of one corner.
- Core a hole out of the cooled cupcakes using a Cupcake Corer.
- Squeeze peanut butter filling into cupcakes, leaving a smooth edge on top to create the Buckeye Candy look.
- Enjoy!
This is a very easy recipe to prepare and only takes minutes to make. If you like to cook and bake with your kids, this is a great recipe to try with them. They will love squirting the peanut butter icing into the cupcakes!
This is actually the first time I used a cupcake corer, it is super easy to use. Simply press into the center of the cooled cupcake to remove the center. Then, fill with the peanut butter mixture. The creamy center gives this a peanut butter and chocolate flavors in every bite instead of just with the icing on top.
