Easy Low Carb Rotini Rosa Recipe
My family can’t get enough of my Easy Low Carb Rotini Rosa recipe and I’m thrilled. Packed with all the good stuff, this recipe is loaded with vegetables and nutrition for your family. - 1 lb boneless chicken breast
- 2 bags Birds Eye Veggie Made Spinach Lentil Pasta with Alfredo Sauce
- 8 oz frozen chopped spinach, thawed and drained I use 1 box but you can use less if you don't like spinach
- 14.5 oz Italian-style diced tomatoes
- 8 oz sliced mushrooms I use one 8 oz jar, you can use more or less
- crushed red pepper flakes for heat optional
- crumbled Feta cheese optional

- Cut and saute chicken until cooked through.
- Add spinach, tomatoes, and mushrooms, heat through.
- Cook Birds Eye Veggie Made Spinach Lentil Pasta with Alfredo Sauce in microwave according to package.
- Stir Birds Eye Veggie Made Spinach Lentil Pasta with Alfredo Sauce into chicken and vegetable mixture.
- Top with Feta cheese and red pepper flakes.

Start by sauteing cut up chicken breast until thoroughly cooked. Add spinach, tomatoes, and mushrooms and heat through.
Microwave Birds Eye Veggie Made Spinach Lentil Pasta with Alfredo Sauce according to directions on back (about 3 minutes per bag). For this recipe, I use two bags of the spinach lentil pasta for 6 servings. If you have a larger family or want leftovers, increase the number of bags. Each bag equals 2-1/2 servings of 1.25 cups each.
Stir in the prepared veggie pasta with the chicken and vegetables.To serve, top with feta cheese and red pepper flakes.
What makes this recipe quick, easy, and healthier is the New Birds Eye Veggie Made pasta. I chose the Spinach Lentil Pasta with Alfredo Sauce to create the rich and creamy rosa sauce in this recipe. The Alfredo sauce in the pasta is delicious. By adding the Italian diced tomatoes, it creates a luscious rosa sauce in no time at all!
If you prefer a penne rosa, you can use the Zucchini Lentil Pasta instead and add your own Alfredo sauce. There is also a cheddar cheese and marinara sauce versions as well.
I like to serve my Easy Low Carb Rotini Rosa recipe with a nice side salad for even more vegetables! I can honestly tell you that my kids and my husband love this recipe as much as I do and had no clue that the pasta is actually made out of vegetables and not wheat flour!! It is an excellent way to get more vegetables and nutrition into your family’s diet without making major adjustments. It is also a great gluten-free pasta option, however even though there are no gluten ingredients, it is prepared in a facility that is not certified ‘gluten-free’ so if you have a strong allergy, this may not be for you.
I especially love that this recipe is low carb because both of my kids are both Type 1 Diabetic (auto immune disease that has no cure). Traditional pasta is about 42 carbs per 1 cup serving. Veggie Made pasta is less than half the carbs at only 20 carbs per 1.25 cups!!! This is a great option for those that are watching carbs for diet or health reasons.
