Colossal Grilled Turkey Legs Recipe
This Colossal Grilled Turkey Legs recipe is easy to make yet makes a big impact. Turkey legs should be enjoyed beyond the renaissance fair and Disney World!

- 6 tbsp Rubarama Jack's Blend
- 3-6 Turkey Legs
- 1/3 cup smoked sea salt
- 1/4 cup Brown sugar
- 2 quarts water
- olive oil
Ingredients

- Combine and bring to boil Rubarama spices, sea salt, brown sugar and water in large pot.
- Remove from heat, add 2 cups ice to cool the brine and refrigerate until cool.
- Rinse and pat dry turkey legs.
- Pour brine over turkey legs covering completely, cover and refrigerate at least 5-6 hours or overnight.
- Prepare your grill to medium to high heat, up to 400°.
- Lightly drizzle olive oil over turkey legs. Rub turkey legs with Rubarama Jack's Blend.
- Sear turkey legs for about 3 minutes on all sides.
- Cook turkey legs by indirect heat at 325-350° for 1 hour, turning every 10 minutes.
- Baste turkey legs with oil after 50 minutes.
- Use a meat thermometer to check internal temperature, it needs to reach 180°.
- Enjoy!
The secret to this delicious recipe is Rubarama. I use Jack’s Blend for turkey and chicken, however the Original No. 4 has a bigger kick and would work equally as well if dad likes spicier food.
Jack’s blend is the perfect balance of sweet and savory. It works amazing with the Colossal Grilled Turkey Legs recipe.
By adding Rubarama twice to this recipe, it is infused with unbelievable flavor. With any turkey leg recipe, you should always brine for at least 5 hours if not overnight. For this brine, I use a generous portion of Rubarama Jack’s Blend, smoked sea salt, and brown sugar. The smoked sea salt adds a delicious smokiness to this recipe however, it can be substituted with ordinary sea salt.
Once you bring the brine to a boil, remove from heat and add 2 cups of ice to cool the brine faster. If you are not in any rush, you can start out with 3 quarts of water and allow to cool in the refrigerator. Be sure that the brine completely covers all the turkey legs, a deeper dish works well.
Remove from brine and pat dry. Drizzle with olive oil and rub additional Rubarama Jack’s Blend into the turkey legs. Gently rub into and under the skin.
Prepare your grill to medium to high heat, up to 400°. I use a charcoal grill to get an even smokier flavor. Sear the turkey legs for about 3 minutes on all sides.
Cook turkey legs by indirect heat at around 325-350°. For my charcoal grill, I move the charcoals to the sides and cook drumsticks in the middle. For a gas grill, turn off one burner and place drumsticks over that area, leave the other side on medium heat.
Cook turkey legs for about 1 hour, turning every 10 minutes so they cook evenly. Baste turkey legs with olive oil about 40 minutes in. Use a meat thermometer to check internal temperature, it needs to reach 180°.
