This is a favorite for my family, year-round because it is quick and easy, low carb, and delicious. Just slice the cabbages, add the tomatoes and bacon and pop in the oven. It couldn’t be simpler. If you aren’t a big fan of cabbage and not sure what to even do with it, this is the only recipe you’ll ever need, trust me! It’s that good!

The one thing you have to do is order the specialty produce and herbs used in this recipe through Chef’s Garden, a local Huron, Ohio farm. Before the pandemic, they only served the nation’s most discerning chefs their produce but when the restaurant industry was hit hard in 2020, they branched out to the public – nationwide – and I’m so glad they did and remain serving us! Now everyone has access to their specialty and heirloom vegetables, herbs and microgreens to consumers direct to your doorstep!

Simple, yet beautiful. Above are the ingredients used in this cabbage and bacon recipe. The star of this recipe is of course, cabbage. This isn’t ordinary cabbage either! It’s Young Cabbage and Arrowhead Cabbage – you won’t find these in any grocery store.  What makes these cabbages special makes them taste all the better! The Chef’s Garden Young and Arrowhead Cabbages are mild and remarkably sweet. It’s nothing like the bold cruciferous flavor associated with traditional cabbage.  This is why your kids will eat it too! I also love that these cabbages are rich in antioxidants and Vitamin C which are essential for good health, improves brain function, improves digestion, and protects against skin disorders and heart diseases.

There is nothing like vine-ripe tomatoes! The Chef’s Garden’s home mixed tomatoes come in a variety of sizes and colors. I use the smaller cherry tomatoes for this recipe because I love how the tomatoes burst when roasted in flavor.
In the end, I like to chop up some fresh Latin Signature Blend herbs and sprinkle on top of this recipe for added freshness.  With cabbage and tomatoes, this is a fantastic family recipe – and the bacon will take it to the next level. This cooked cabbage dish is keto, paleo, gluten free, egg free, nut free and dairy free.
