Delicious and Easy Cracker Topping Recipes with Triscuit Brown Rice Crackers

Now that it is Fall, it is time to start thinking about appetizers for holiday parties. I especially like cracker topping recipes for parties. One essential ingredient is the cracker. It has to be a sturdy cracker to hold the topping, plus it has to taste delicious and compliment the toppings.

One way I like to find new recipes is with Pinterest. Triscuit teamed up with Rocco DiSpirito from the popular Now Eat This series to create toppings for the delicious Brown Rice Triscuit crackers.

I told you about the Brown Rice Triscuit cracker varieties last may with a full Brown Rice Triscuit review. I’ve been a fan ever since! You can check out all of Rocco’s cracker topping recipes on the Triscuit Pinterest page.  Everything looks delicious, I tried a couple and created a couple others from the inspiration I received from the Pinterest page and with the ingredients I already had on hand.

Hummus Cracker Topping Recipe

Rocco’s Roasted Red Pepper and Olive Hummus recipe looked great.  I already had humus with red peppers, so I added that to Lindsay sliced olives for a very simple cracker topping recipe. It was especially easy since the olives were pre-sliced!

It looks pretty fancy for just a couple minutes, doesn’t it? I chose the Brown Rice Triscuit Sea Salt & Black Pepper flavor for this recipe. It was delicious!CrackerToppersRecipes (13)

Pepper Jack & Corn Salsa Cracker Topping Recipe

Rocco’s Pepper Jack & Corn Salsa Cracker Topping Recipe calls for 3 simple ingredients Pepper Jack Cheese, Corn Salsa, and of course Brown Rice Triscuit Red Bean crackers.  I had Swiss cheese on hand and black bean corn salsa.

Rocco’s recipe inspired me to go further and create a Mexican cracker topping recipe. I used Brown Rice with Red Bean Triscuit crackers, prepared taco meat, cheddar cheese, black bean and corn salsa (you can use your favorite!), and sour cream.CrackerToppersRecipes (4)

I baked both sets of cracker recipes in a preheated 350 degree oven for 6-8 minutes to melt the cheese.CrackerToppersRecipes (6)

The cheese and corn salsa crackers turned out delicious. I agree that pepper jack cheese would be better but there is no wrong way to top a cracker!CrackerToppersRecipes (11)

The Mexican version that I created was like a mini taco on a cracker. It was yummy. My kids loved it. This is a perfect after-school snack or kids party appetizer too. It is a great way to use left-over taco meat too!CrackerToppersRecipes (10)

Caprese Cracker Topping Recipe

Everyone loves fresh Caprese salad. I decided to switch it up and make it a cracker topping. I used sliced mozzarella cheese although I would prefer fresh mozzarella and would buy that for a party. I added Traina Sun Dried Tomatoes and fresh basil from my garden.

This is super simple to make. I used a vegetable cutter to make a cute shape for the cheese. I topped that with the tomatoes and a small basil leaf. This was all on the delicious Brown Rice Triscuit Sea Salt & Black Pepper crackers. The crackers were the perfect compliment for Caprese salad ingredients.CrackerToppersRecipes (1)

Sweet Mango Chutney Cracker Topping Recipe

I created this simple Sweet Mango Chutney Cracker Topping Recipe after the success I had with the Mango Rice Recipe I tried last week using Success Boil-in-Bag Jasmine rice. I’m on a Mango chutney kick now!CrackerToppersRecipes (7)

This is another simple way to entertain with a delicious and unique appetizer. I used the Triscuit Brown Rice Sweet Potato crackers as sweet potatoes are found in many recipes that call for mango chutney. I topped the cracker with Philadelphia cream cheese, and sweet mango chutney.CrackerToppersRecipes (12)

Choose Triscuit for Parties

Like I said earlier, choosing the right cracker is the most important part of any cracker topping recipe. It has to taste great and be able to hold the yummy toppings. Serving crackers that break when topped is embarrassing – let alone messy!

I’m a fan of original Triscuit but the newer Brown Rice varieties are amazing -topped or alone. They combine 100% whole grain brown rice to their wheat crackers along with other real food ingredients like sweet potatoes, red beans, peppers, and onion. It is hard to choose a favorite but since I like a lot of Mexican inspired dips and toppings, my favorite has to be the Brown Rice Triscuit baked with Red Bean seasoned with Savory Red Bean, it is perfect with everything.  They are all delicious though. If you want a “simple” cracker that will go with anything, check out the Brown Rice Triscuit seasoned with Sea Salt & Black Pepper first, it is delicious alone or with a dip or topping.
