One Skillet Chicken Tetrazzini Bake Recipe

If you love cheesy, creamy dishes, you will definitely love this one. Called a tetrazzini in Italian, it is often served in restaurants in an elaborate display. My daughter, Malia, and her boyfriend actually found a base version of this recipe in a cookbook for one of their at-home date nights, but they completely personalized it to make it their own by throwing in fresh broccoli and upgrading the ingredients!

Instructions
  1. Get Your Oven Ready: Turn your oven on to 350°F right before you start so it reaches the perfect temperature by the time your skillet is prepped and ready to go.
  2. Cook the Fettuccini: Crank up the heat to high under your heavy cast-iron skillet, adding the 6 cups of water and a good shake of salt. Once it hits a rolling boil, drop in the pasta and let it cook for around 8 minutes. You want it just shy of fully cooked, as it will soften up more while baking. Drain it well, move it into a medium mixing bowl, and set it aside for a moment.
  3. Soften the Onions: Return that same cast-iron skillet back to the stove over medium heat and drop in your butter to melt. Toss in your chopped onion, stirring occasionally for about 4 minutes until they become beautifully soft and translucent. Add chopped broccoli and cook additional 2 minutes.
  4. Sauté Your Gourmet Mushrooms: Add the minced garlic and your sliced Caputo & Guest Maitake mushrooms right into the skillet with the onions. Keep things moving frequently for about 3 minutes so the specialty mushrooms can soak up all of those rich, buttery aromatics.
  5. Mix It All Together: Take the skillet completely off the burner. Gently fold in your reserved pasta, the jar of alfredo sauce, chicken broth, shredded chicken, and the first cup of mozzarella cheese. Toss a little salt and freshly ground black pepper in to taste, mixing thoroughly until everything is evenly combined.
  6. Bake Until Bubbling: Evenly sprinkle the remaining cup of mozzarella over the top of the pasta mixture. Seal the cast-iron skillet tightly with a piece of aluminum foil and pop it in the oven to bake for 20 minutes. Take the foil off and let it bake uncovered for 10 more minutes so the top gets wonderfully melted, golden, and bubbling. Dish it up right away while it's hot, gooey, and perfect for a family dinner!

Their absolute best customization was swapping out standard grocery store veggies for fresh, premium Caputo & Guest Maitake hen of the woods mushrooms. It completely revamped the flavor profile, making it taste like an upscale restaurant entrée rather than a basic home-cooked pasta dish.

Gathering around the table for a hearty meal is one of our favorite traditional family moments. On this particular night, I happened to be home and just had to snap a picture of their gorgeous final product! Usually, this is strictly their private date night activity as they learn to cook new things together, but my husband and I lucked out and they shared the meal with us.

Let me tell you, it was absolutely delicious! It just goes to show that even when you are still learning to cook, you can create a truly gourmet meal that tastes phenomenal and is so much fun to make together.

I think it is so much fun to see my kids cook in the kitchen as they transition into young adulthood and cook with their significant others—though I still vividly remember when they were just toddlers helping me stir bowls on the counter! It brings back so many sweet memories of when my husband and I used to cook together when we were their exact age. We have been together for 28 years now, so I can confidently say that couples that cook together stay together! Cooking together is just so much more special than simply sharing a meal; it builds a real connection.

Why Caputo & Guest Mushrooms Revamp the Entire Bake

The absolute secret to making this the best tetrazzini you will ever taste comes down to the quality of the ingredients. Caputo & Guest is a family-owned grower based in Kennett Square, Pennsylvania—the Mushroom Capital of the World—that has been cultivating premium mushrooms since 1977.

Their indoor, manure-free growing process utilizes a unique blend of organic oak and poplar sawdust combined with grains. This cleaner agricultural method gives their Maitake mushrooms an incredibly rich, woodsy aroma and a firm texture that absorbs the creamy alfredo sauce beautifully without losing its bite.

If you typically buy your mushrooms from a standard grocery store, you might be used to varieties that lack flavor or turn slimy when baked. That’s the opposite of what you get with Caputo!

The “Why” Factor: Why Use Maitake Mushrooms?

Why choose Maitake (Hen of the Woods) for a pasta bake? Unlike standard button mushrooms, Maitake mushrooms feature delicate, feathered edges that crisp up beautifully when sautéed in butter. They deliver a deep, earthy umami profile that cuts through the richness of the cheese, completely revamping the entire flavor structure of the casserole.

One Skillet Chicken Tetrazzini Bake FAQ

Can I make this Chicken Tetrazzini Bake ahead of time?

Absolutely! You can assemble the entire dish in your skillet right up until the baking step, cover it tightly with foil, and store it in the refrigerator overnight. When you are ready to serve, just add an extra 5 minutes to the covered baking time to ensure it heats completely through.

Why is a cast-iron skillet best for this recipe?

Using a heavy cast-iron skillet allows you to boil the pasta, sauté your gourmet mushrooms, and bake the entire casserole all in one single pan. It retains heat beautifully, which ensures your cheese melts uniformly and creates that perfect, bubbling crust. If you don’t have a cast-iron skillet, prepare the pasta in a pot then cook all the ingredients in a skillet. Combine together and bake in an oven-proof casserole dish.

Where can I buy these specific manure-free mushrooms?

You can order these chef-quality specialty options directly from the official Caputo & Guest website. Because they are located just one state over in Pennsylvania, your order bypasses long supply chains and arrives fresh at your Ohio (and across the country) doorstep within 48 to 72 hours!
